Our first coyote sighting and 2-ingredient pancakes

On Saturday Katie was looking out the front window and started barking, and wouldn't stop.  I looked out, and there was a coyote walking toward the next wash, across, and kept going behind the bushes.  Unfortunately, yesterday I washed and waxed the truck and front panels of The Palms, but didn't do the windows yet.  The front was SO filthy, dust, road bugs, etc.  Not it's all shiny and clean, but the windows are still dirty.  Still, I was able to get a couple of photos that were 1. the coyote is behind a bush, and 2.  the coyote is blurry.  I still had to post them.  I do love my coyote sightings!




Below is one of the beautiful, huge saguaros near our site.  It has a thick trunk and lots of arms, so it must be quite old. 

And now a question for you: have any of you made 2-ingredient banana pancakes?  I tried the recipe I found on-line to see if it would really make pancakes.  I had a lot of bananas that were ripening too fast and needed some new ways to use them up.   All the recipes I found had basically the same two ingredients:  one banana and two eggs, and a little baking powder that makes them better.  Unfortunately I didn't have any baking powder, so I added a little pancake flour.  This is how mine turned out:


I had a problem keeping them corralled in their little round spots, and it was hard to turn them over.  The first bottom side on each batch was too brown, just short of being burned.  They didn't stay round and when I took them out to plate them, they were pretty floppy.  But, amazingly, they did taste like pancakes.  I guess I'll have to get some baking powder, because I always have eggs, and often have bananas that are too ripe to eat for me.  I like berry syrup better than maple, so I might pick up some of that, too.  Any suggestions from anyone who has tried this recipe?  :)

Here's my Christmas tree, for the third year.  Last year I bought a little green tree, decorated it with balls and flowers and lights.  It was pretty, but I never liked it as much as this tin, hanging tree.  So, I took all the decorations off to save just in case I can use them again put them in a baggy to stow away, and put the tree by the dumpster.  I hope someone finds it who will like it as much as I like my tin tree:

    1. I didn't notice - I was up a little before 6, and took the photos before the sun actually came up - probably a little before 7? I'm usually under the down comforter until 9ish - either asleep or listening to NPR on Sirius - so that was super early for me. :)

  2. I Regularly make 2 ingredient pancakes with egg and almond flour. 2 eggs, 1/2 cup almond flour (or more if eggs are runny), pinch baking soda and teaspoon vanilla essence. They turn out perfectly. Sometimes I add berries when I'm cooking.

    1. That sounds delicious! I'm looking for a way to use up ripe bananas and wondered if my floppy pancakes were normal or if I am doing something wrong.

    2. Banana's will add moisture to the mix. I'd try adding some almond flour to "tighten" it up. Granted it'll be 3-ingredient pancakes at that point, but I think it'll get the texture right.

    1. Thanks, Dizzy-Dick! You didn't decorate at ALL? I'm still looking for the PERFECT Christmas. One that I just love that sits on my dinette table without being in the way. This is my 4th Christmas in The Palms, and I haven't found it yet. The tin tree is pretty darn good, though. :)

  4. I love trying these oddball recipes - you never know when something really great might happen. But if I am going to eat two eggs, I think I would rather have a more traditional omelet with lots of cheese and veggies - or poach them to go with polenta - so that the "egginess" is enjoyed instead of "banana" being the main focus.

    I love bananas - they are great to quell a "can't wait until dinner" tummy complaint about being left to starve!

    1. I agree - I love scrambled eggs and omelettes. AND Eggs Benedict - that's our designated holiday breakfast in my family. When I called the kids this Thanksgiving, my daughter was stuffing the turkey and my son was making the Eggs Benedict. I was so glad their families were spending the holiday together.

      BUT - my object this time was to find a way to use up bananas that were too ripe. Not a smoothie. Not banana bread. And this pancake recipe just didn't seem right.

  5. I would think bananas would make a rather mushy pancake compared to berries. Not sure what you can do about that. But a little vanilla is always a good thing. Love that sunrise picture - WOW.

  6. I love to see coyotes also, although it's been a long while since I've spotted one.

    I don't decorate this time of year either. But I sure spend enough money on presents for all my grandchildren!

  7. I love coyote watching, bird watching, cactus sighting and even gorgeous sunrises and sunsets. You sure had a gorgeous one too. My pancakes are simple and easy. My mom used Krustez and I do the same. All I have to add is water unless I want to throw a few bananas on top or other fruits!

  8. I used to make waffles with ripe bananas and oatmeal mixed up in a blender, I think the recipe called for a touch of vinegar and maple syrup. I will see if I can find the recipe or maybe google oatmeal-banana waffles.

    Serves: 3 (full waffles)

    2 cup rolled oats
    2 cup water
    1 medium banana
    1 tbsp raw sugar, or other sweetener
    1/4 tsp salt
    1 tsp vanilla extract
    Place all ingredients in a blender and blend until smooth. Let stand a few minutes; if batter becomes too thick, add enough additional water to make batter easily pourable. Pour into a heated, oil-sprayed waffle iron. Cook for 10 minutes without lifting the lid.

  11. Wow what a beautiful sunrise! With the pancakes maybe try whipping the eggs to a super froth then add the bananas. That might help. Do you miss having a "toad"? I debate between towing my jeep or just winging it with the motorhome. Do you think there is an inconvenience when you have to drag everything up to get groceries, do laundry or whatever or do you just get used to it? I hate the thought of having two rigs to take care of but I like the idea of having that extra rig if something should happen...

    1. Hi - I haven't been asked that question about a toad for a long time. NO, I don't miss a car at all. I have a 24 foot motor home, so it's easy to drive around town and find places to park. Also, when I grocery shop, everything comes right into the rig and is put away before we even get back on the road. Laundry? I bring hangers into the laundromat, hang things right from the dryer, and they immediately go into the rig and are hung up. No wrinkles! On warm days, I can turn on the overhead fan and the floor Fantastic fan, and Katie is nice and cool. She's in her bed, or in the car seat watching the parking lot goings-on.

      AND... No money going out for the car. No purchase price, insurance, annual license, semi-annual smog test, repairs or maintenance. For me it's been working great for three and a half years, so I'd say don't buy a car unless you really feel you need one. If I had a longer rig, maybe 30 feet or more, I'd probably want one, though. :)

    1. They really tasted good. You get your eggs and fruit in one pancake, but I have Baking Power on my shopping list. I think that might have been what was missing; a couple of people in the recipes I read on-line said it makes a difference.

  15. I like your metal tree and your coyote. We're at Monticello Point/Elephant Butte and a coyote walked right through our campsite this afternoon. I need to keep a camera handy.

    I'll have to try those pancakes. I make a lot of 2-ingredient muffins, cookies, etc using banana or canned pumpkin. Lots of good recipes like that online.
